Cut meat into matchsticks with very sharp knife. Chop sliced onions finely. Heat oil and butter together, when piping hot add onions. Reduce heat and allow to fry gently until soft but not brown. Increase heat strongly. Fry meat matchsticks until well sealed and lightly browned. Add mushrooms, chosen wine, always stirring briskly. Shale and turn until mushrooms are cooked (2-3 minutes). Add cream, stir in prepared lemon and herbs. Season with salt and pepper. Pout inside rice border. Hope that your Mother will enjoy it again!
