It works really well... I've recently tried it again for the Bûche de Noël :-) thanks...Keep Calm and Fanny Onhttps://www.blogger.com/profile/13805757699969350030noreply@blogger.comtag:blogger.com,1999:blog-2989495098344372691.post-10289429516344477202015-01-20T13:17:55.111+00:002015-01-20T13:17:55.111+00:00I remember a fatless sponge recipe from one of Fan...I remember a fatless sponge recipe from one of Fanny's BBC booklets (sorry I don't remember which) which instructs you to put the sugar (caster not icing) onto a metal plate and put in the preheated over for 6 minutes (watch to make sure it doesn't melt!) then adding the hot sugar to the eggs as you whisk them. I makes a huge foam, gives very light sponges and adds an extra taste too.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-2989495098344372691.post-89649494885403415252014-05-26T18:37:47.953+01:002014-05-26T18:37:47.953+01:00Thanks, it makes me nostalgic too learning and rel...Thanks, it makes me nostalgic too learning and relearning all these old techiniques - glad you liked it! If you are ever in Australia, this is what we mean when we say a sponge cake - my mum makes them regularly but I have never taken up the mantle as they weren't my favourite but it makes me feel all nostalgic to see the cake tin being greased and floured like that. My mum always iced hers and filled with either whipped cream or lemon filling (I guess like lemon curd) but I quite like the look of your jammy filling.Johanna GGGhttps://www.blogger.com/profile/08594201473931487490noreply@blogger.comtag:blogger.com,1999:blog-2989495098344372691.post-7613667502953445612014-05-25T19:39:28.763+01:002014-05-25T19:39:28.763+01:00Maybe three?
