Have tried them a couple of times but used strong flour & did the traditional turning. Loads of work but satisfying. Mind you most patisseries in France don't bake their own these days, they buy them in, there's been lots of complaints here in Brittany. Fanny should have known that. The technique is not THAT different from the real one (apart from the self raising flour, proving and so on), but you most definitely need to prove them to get that wonderful flaky texture. I actually did a course at the Cordon Bleu in Paris on how to make <i>croissants</i> and <i>pains au chocolat </i> and to be honest, I agree with David: life is to short to make them at home. I have made them a few times since but they are almost impossible to time for breakfast due to ... you guessed it, the proving. The wonderful sweet and saltiness of croissants is not to the Italian taste (I was reprimanded recently for putting a pinch of salt in my shortcrust pastry!) and so they are impossible to find here.
